It is often said that part of a poor diet is eating in Chinese and Indian restaurants because of some of the ingredients used. It does not have to be like that. If you cook at home (it doesn't take long) you can substitute olive oil for ghee and use less salt & sugar. Here is a recipe for a tried and tested lamb madras. It can be made less strong for those who like mild curries.
Ingredients for 4 people
Half a shoulder of lamb boned and cut into pieces.
Olive oil
1 chopped onion
2 cloves garlic (optional)
1 lemon
2 beef stock cubes
ground cumin
ground turmeric
Curry powder or flaked chillies
1 seeded chopped fresh green chilli (this really does improve flavour).
1 bay leaf
1 tin chopped tomatoes
Half a glass of red wine (optional)
Small piece of chopped root ginger
Coriander leaves
Ground black pepper
Garam masala
Other herbs such as fenugreek or cardomom can be added to taste.
Gather together by the cooker all of the ingredients you intend to use. Add 1 opened bottle of cold beer and a glass.
Put the oil in a pan and fry the bay leaf and onion for 4-5 minutes. The idea is to get the edges of the onion slightly browned. Add the chilli, garlic and black pepper then the cumin, turmeric and any other herbs. Fry for another minute stirring all of the time.
Add the wine, lemon juice, tomatoes, stock cubes and ginger. Use the tin to pour in 1 canful of water. Simmer gently and add flaked chillies or curry powder to taste.
In another pan, brown the pieces of meat and then place in the sauce to simmer. (you can use just one pan by browning the meat first, removing it and then going ahead with the onions etc)
Pour the beer into the glass and drink while listening to your favourite music and the gentle simmering of your curry for which you are going to get prizes. Continue to simmer until the meat is tender, amend curry strength to suit your taste.
1 minute before serving add a couple of spoonsful of Garam Masala and sprinkle on some chopped coriander.
Serve with some rice and/or naan bread and use poppadoms as a starter. Grab another beer.
